Kadai Chicken

Kadai Chicken or Karahi Chicken is a hallmark North Indian dish, a favourite among Non-vegetarians. It is a lip smacking spicy and creamy gravy with a sprinkle of crunchy diced capsicum.

This recipe is made in three steps. First, the chicken is marinated with a few seasonings and spices. Second, the chicken is shallow fried and third, the chicken is cooked in a tomato-onion based creamy gravy.

This is my take on this scrumptious dish. Try this show stopping dish to impress your loved ones and leave them wanting for more. Serve this dish with roti, naan, paratha or rice.

Marinade time : 30 Mins

Prep time : 15 mins

Cooking time : 30 mins


For the marinade :

  • Chicken – 1 kg
  • Ginger Garlic paste – 1 tablespoon
  • Black Pepper Powder – 1/2 teaspoon
  • Lime juice – 2-3 tablespoon
  • Salt to taste
  • Oil – 1 tablespoon

For the Paste :

  • Tomatoes – 2-3 medium sized
  • Green Chilli – 2 nos
  • Ginger Garlic paste – 1 tablespoon
  • Cardamom – 3, just the seeds
  • Cloves –  3 nos

For Sauteing :

  • Onions – 2 large onions
  • Coriander seeds – 1/2 teaspoon crushed
  • Ginger – 1/2 teaspoon, finely chopped
  • Green chillies – 2 nos, roughly chopped
  • Chilli Powder – 1 1/2 tablespoon
  • Turmeric Powder – 1 teaspoon
  • Garam masala – 3/4 teaspoon
  • Kasuri methi – 1 teaspoon
  • Fresh Cream – 150 ml
  • Water – 1 Cup
  • Coriander leaves for garnish


  • Marinade the chicken with the other ingredients mentioned and allow it to rest for a minimum of 30 mins.
  • Make a smooth paste out of the tomatoes, green chillies, ginger garlic paste, cardamom and cloves along with water.
  • Shallow fry the marinated chicken in a heavy bottomed Kadai.
  • In the same oil, add the finely chopped onions, ginger and chillis and saute till the onions turn golden brown.
  • Add salt, chilli powder, turmeric powder, garam masala, kasuri methi, crushed coriander and the diced capsicum along with the tomato paste and water.
  • Allow the gravy to boil well and add the fried chicken. Cook the chicken in the gravy for 10 mins on a low flame with the lid on.
  • Add the fresh cream and coriander leaves

Tips : Add 1/2 cup milk and 2 tablespoons of butter instead of the fresh cream for a healthier alternative.
